I love my crockpot. It is one of my main workhorses. This easy recipe is great for busy Fall days. Today was my infusion day, so dinner prep time was minimal. The perfect dinner came to mind. Country style pork ribs are usually boneless and a terrific cut for the crockpot. Now I will let you in on my busy day and recipe.

I have CVID, and I get monthly infusions of HyQvia. Since today was my infusion day, I got up early to get myself ready. Then I got my 10 year old ready and took her to school. Back home, I had breakfast and took my morning meds. Next I prepared and started the pork ribs before I left for my appointment.

Directions for the Pork Ribs:
1. Put the pork ribs in the crockpot. I arrange them so they are staggered.
2.  Pour a half of a can of Sprite or Ginger Ale.
3. Sprinkle with garlic salt. Cook on low 6-8 hours.

I got back an hour before lunch and still had time to rest 40 minutes before I quickly finished our lunch.

When it is almost dinnertime, microwave your choice of steamed vegetable. Rice pilaf goes wonderful with the pork. Birdseye has several good choices you can get at the store. We just tried a Schwans home delivery rice pilaf that was awesome.

For New Years Day: Do the above recipe, except right after the meat is put in a can or 2 of drained sauerkraut.  Close to dinnertime, heat up heat and eat mashed potatoes to complete your meal.
